Ploughman's Sandwich
A ploughman's sandwich takes the classic British pub lunch of cheese, pickle and salad and puts it between two slices of bread. The sweet pickle cuts through the cheddar with a sour edge, while crisp iceberg lettuce keeps the filling from turning dry. It needs no cooking and takes about two minutes, which makes it a practical lunch for a busy day.
Instructions
Lay out the two slices of bread on a clean board. If you are using mayonnaise, spread a little on the inside of one or both slices now.
Place a single layer of sliced cheddar on one slice of bread, covering it from edge to edge.
Spread a thin layer of sweet pickle over the cheese. Keep it thin so the pickle adds sharpness without overwhelming the cheese.
Pile 2 to 3 layers of lettuce on top, then add a few tomato slices. Add sliced onion here if you want it.
Close the sandwich with the second slice of bread and press down gently. Cut it in half if you like and serve it straight away.
