Po' Boy

The po' boy is a New Orleans sandwich built on French bread, and it takes almost no effort to put together. The name comes from "poor boy," since nuns in the city traditionally handed these sandwiches to poor street boys. Fill it with sliced ham, turkey or roast beef, or with fried shrimp, oysters or fish. Pile on lettuce, tomato and pickles, then press it flat and eat.
Instructions
Slice the loaf of French bread along one side, leaving the other side uncut so it opens like a book.
Open the bread and lay the sliced cheese along the bottom half. Add shredded lettuce and your choice of meat or fried seafood on top.
Add tomatoes, pickles and any other dressing you like. Spread on mayonnaise, mustard or gravy to your taste.
Fold the bread closed the way you would close a book. Press down firmly to mash the sandwich together before eating.
