Potato Balls
Potato balls turn leftover mashed potatoes into a crisp, golden side dish with very little effort. The yolk binds the mash so it can be rolled by hand, and a dip in beaten egg gives flour or breadcrumbs something to cling to. Frying in drippings adds a savory depth that plain oil lacks. Instructions
Put the mashed potatoes in a bowl and stir in the egg yolk until the mixture is evenly combined and holds together.
With your hands, roll the potato mixture into balls of even size so they cook at the same rate.
Dip each ball in the beaten egg, letting the excess drip off, then coat it with flour or with breadcrumbs.
Heat the drippings, or your other fat or oil, in a pan. Fry the balls, turning them as needed, until they are golden all over.
