Potato Spelt Oat Burger
Potato Spelt Oat Burger is a meatless patty built from leftover mashed potatoes, spelt flour and oat flakes. The oats give the patty a chewy bite, while the spelt adds a faint nuttiness and helps everything bind without egg. Soy sauce brings salt and depth, and gyro spice, savory and chili powder do the work a grill would otherwise do. Fry the patties in a thin layer of oil for a browned crust.
Instructions
Put the mashed potatoes, spelt flour and oat flakes in a large bowl in roughly equal amounts, about one part of each.
Stir in the soy sauce and a little water until the mixture is thick and holds together.
If you are using onions and tomatoes, chop them and fry them in a little oil until softened, then fold them into the potato mixture.
Season with salt, pepper, savory, chili powder and gyro spice, adding each a little at a time and tasting as you go.
Shape the mixture into patties with your hands.
Heat a thin layer of oil in a pan and fry the patties lightly. Turn them once, and they are ready when both sides are browned.
