Potatoes Roasted under Meat
Potatoes roasted under meat are a simple way to get a side dish out of the roast you are already cooking. Instead of using a separate pan of fat, you set the part-boiled potatoes beneath the spit so the meat's own drippings fall on them. They brown slowly and take on the savory flavor of the joint. The method comes from the old Household Cyclopedia, and it still works.
Instructions
Half-boil the potatoes, then drain off all the water.
Put the potatoes in a baking dish or pan. Set the dish beneath a joint of meat that is roasting on a spit, so the drippings fall onto the potatoes.
Baste the potatoes now and then with the drippings that collect in the dish. When one side has browned, turn the potatoes over so the other side can brown too.
Serve the potatoes alongside the roasted meat.
