Poundo potato is a Nigerian swallow made from potato flour, a quick stand-in for dough that is traditionally pounded by hand. It needs only flour and water, and the whole job takes a few minutes at the stove. The one skill that matters is steady stirring while the flour goes in, which keeps the mass smooth instead of lumpy. Instructions

Bring water to a boil in a small pot.

Stir in the potato flour until the mixture turns thick. Keep stirring as you add it so lumps do not form.

Add a little more water and cook over low heat for 5 minutes.

Stir again until the mixture is smooth.

Take the pot off the heat and wrap the swallow in a wrapper. Serve it with any soup you like.
