Poundo yam is a Nigerian swallow made from yam flour, with no mortar and pestle needed. Traditional pounded yam takes real effort and a heavy pestle, but the flour version gets you a smooth, stretchy dough with just a pot and a spoon. Its mild taste is meant to carry a strong soup, so pair it with ẹfọ riro, ogbono soup, or ẹgusi soup and eat it by hand.

Instructions

Bring water to a boil in a pot.

Pour in the yam flour a little at a time while stirring slowly. Keep stirring until the mixture is smooth and free of lumps.

Add a small amount of extra water and cook for a few minutes.

Serve hot with the soup of your choice.
