Dynamite Shrimp

Dynamite Shrimp are jumbo shrimp fried in a cornmeal crust and tossed in a hot blend of Cajun seasoning, cayenne and black pepper. The lemon juice does the work of a wet batter, gluing the cornmeal to the flour and adding a sharp edge. Because the seasoning goes on after frying, its heat stays loud and fresh. The whole fry takes about two minutes a batch.

Instructions

Stir the salt, black pepper, Cajun seasoning and cayenne together in a bowl and set it aside. This is the seasoning you will toss the shrimp in at the end.

Coat each shrimp in flour, dip it in lemon juice, then press it into the cornmeal. Leave the coated shrimp to sit for 2 to 3 minutes so the coating can settle.

Heat the oil to 375°F. Fry the shrimp in batches for about 2 minutes, until they are golden brown and cooked through.

Lift each batch out and drain it on a wire rack. Keep the rack in a single layer so the coating stays crisp.

When all the shrimp are fried, toss them in the seasoning mixture until evenly coated. Serve right away while they are hot and crunchy.
