Quaker Oat Swallow
Quaker oat swallow is a Nigerian swallow made from ordinary rolled oats ground to a powder. The oats take the place of the usual cassava or yam flour, so a pantry staple becomes a smooth, thick dough for scooping up soup. The method is short: stir the powder into boiling water, then steam it briefly with a splash more. The trick is restraint with that last addition of water, since too much turns the swallow soft.
Instructions
Bring water to a boil in a pot.
Stir the powdered oats into the boiling water until the mixture thickens. Keep stirring so that no lumps form.
Add a very small splash of water and cook on low heat for 5 minutes. Go easy on the water, because too much will leave the swallow too soft.
Stir once more until the mixture is smooth.
Take the pot off the heat and put the swallow into a wrapper.
Serve with any soup you like.
