Quesadilla

A quesadilla is a hot, cheese-filled tortilla that takes only a few minutes in a pan. This version uses two small flour tortillas, so the top one acts like a wrap lid and the wedges can be eaten by hand. A blend of Monterey Jack and cheddar melts smoothly, and well-drained fillings such as black beans, spinach or salsa keep the crisp tortilla from going limp.
Instructions
Warm both tortillas in the microwave until they are flexible, and keep one of them warm while you work with the other.
Heat a frying pan or griddle over medium-low heat. Grease it with oil or cooking spray and lay one tortilla in the pan.
Scatter the grated cheese over the tortilla in the pan. Add your choice of fillings on top, spreading them evenly across the surface. They work best warm and very well drained, so the tortilla does not turn soggy.
Let the cheese melt. The tortilla may brown in a few spots, but it should not change color much overall.
Press the second tortilla on top so it sticks slightly to the melting cheese. Flip the quesadilla and heat it until the two tortillas hold together as one.
Take it out of the pan and cut it into eight wedges. Serve right away, or hold it in a low-temperature warm spot, kept below the point where the cheese would melt again.
