Ragi Dosa (South Indian Millet and Rice Pancake)

Ragi dosa is a traditional pancake from Karnataka, especially the south of the state, made with finger millet instead of the usual all-rice batter. The ragi, rice and urad dal are soaked and ground, then left to ferment for about 10 hours, which gives the batter its character. Serve the dosas with onion and garlic chutney, and plan ahead, since the batter needs most of a day.

Instructions

Put the ragi, rice and urad dal into three separate bowls, cover each with water and soak them for 5 hours.

Drain the soaked ingredients. Grind the rice with a little water first until it forms a batter, then grind the urad dal and ragi together with water.

Combine all the ground batters in one large bowl and stir well. Leave the bowl to stand for about 10 hours so the batter ferments.

After the fermentation, stir in salt to your taste. Add a little water if the batter seems too thick to spread.

Heat a tava until hot. Pour a cup of batter onto it and spread it out into a pancake, then cook it until it is done to your liking.
