Rainbow Jell-O is a tall, striped gelatin dessert built from five colors, with a clear layer and a creamy layer for each. The sour cream or yogurt stirred into every other layer makes it opaque, yet it cannot be tasted in the finished slice. Most of the five hours is spent waiting between layers, so it suits a day when you can share the work and the smell of Jell-O with friends.

Instructions

Choose one or more molds with a combined volume of about 8 cups. A ring mold or two or three glass containers both work, and each should be at least 3 in (10 cm) deep so you can fit about ten layers of 1 cm each.

Stir 1¼ cups boiling water and one package of gelatin in a small bowl for at least 2 minutes, until dissolved. It may not dissolve completely, and that is fine.

Pour ¾ cup of the dissolved gelatin into the mold or molds. Refrigerate for about 15 minutes, until the surface is set but still tacky and sticks to a finger when touched. This tackiness helps the next layer cling without mixing in.

Chill the rest of that gelatin for about 5 minutes, until slightly thickened to the consistency of unbeaten egg white. Gradually stir in 3 tablespoons of sour cream or yogurt to make it opaque.

Spoon the creamy gelatin gently over the set layer so the surface stays smooth. Refrigerate for about 15 minutes, until tacky again.

Repeat the process with each remaining flavor, making a clear layer and then a creamy layer for each color. Cool each layer enough before adding the next so that nothing melts or blends.

When all layers are in, refrigerate for about 2 hours, until firm.

Unmold the gelatin onto a plate or smooth cutting board, most likely upside down. Cover with plastic wrap or foil and keep refrigerated, then slice across the layers, about 1 cm thick, so each slice shows every color.
