Rava Dosa (Indian Semolina Pancake)

Rava dosa is a thin, lacy South Indian pancake that gets its crisp texture from semolina mixed with rice flour and plain flour. The batter needs no fermenting, so you can go from bowl to pan in minutes. Buttermilk adds a light tang, while green chiles and cumin season every bite. The batter is thin enough that you scatter it over the pan by hand, which creates the open, net-like pattern.

Instructions

Put the rice flour, maida, suji, salt, green chiles, cumin and buttermilk in a bowl. Add water and stir until you have a thin, watery batter.

Heat a griddle or pan over the stove and rub the surface with a little oil.

Scatter the batter over the hot pan with your hand, letting it fall in a loose, lacy pattern rather than pouring it in one spot.

Cook on medium heat for 3 to 4 minutes, until the dosa is completely cooked through and set across the whole pan.

Serve it hot with tomato chutney or peanut chutney.
