Rice an' Peas
Rice an' peas is a Caribbean staple that needs nothing more than a rice cooker and four ingredients. Coconut milk replaces some of the water, so the brown rice cooks up rich and slightly sweet around the beans. Kidney, black or pinto beans all work, dried or canned. The dish is vegan and suits ital cooking, and the cooker handles the timing while you do something else.
Instructions
If you are starting with dried beans, cover them with water and leave them to soak for at least 8 hours.
Drain the beans and rinse them under running water. Do this even with canned beans.
If you are using dried red kidney beans, boil them briskly for 20 minutes, then drain them again.
Put the rice, beans, water and coconut milk into a rice cooker. On a programmable cooker, choose the brown rice setting. On a simple on/off cooker, switch it on.
The rice should be cooked after about 30 minutes. Open the lid, stir the rice and beans together, and serve.
