This vegan burger builds its patty from rice, oat flakes and semolina, bound together with nothing more than water and fried onions. The three grains give a patty that holds together in the pan and browns well, while onions and optional leek and mushrooms add savory depth. Sliced up, the cooked patties also work as a stand-in for fried chicken in a salad.

Instructions

Combine rice, oat flakes and semolina in roughly equal volumes in a large bowl.

Stir in water a little at a time until the mixture turns thick and viscous, like a heavy batter.

Season the mixture with spices to your taste. The patties are also good with no spices at all, if you prefer to let the onions carry the flavor.

Chop the onions and the leek, then fry them in a little oil. When the onions turn glassy, add maize, paprika and mushrooms to taste, then fold the vegetables into the mixture.

Heat a pan until hot and brush it lightly with oil. Spoon in the mixture and fry the patties, using as little oil as you can, because too much will leave them soaked in fat.

Press each patty flat with a spatula as it cooks if you want a thinner burger.
