Rice Water Porridge
Rice water porridge is a typical Ghanaian breakfast that turns a handful of rice into a soft, creamy bowl. Because it is cooked in water rather than milk, it is lighter than rice pudding, and the milk goes in at the table so each person can pour as much as they like. Beating the cooked rice against the pot does the work of a blender. Soaking the rice overnight makes it smoother still.
Instructions
Wash the rice, then put it in a saucepan with a few cups of water and bring it to a boil.
Keep boiling for about 20 minutes, until the rice has soaked up the water and turned soft. If the pot looks dry or the rice is still firm, stir in the salt and one more cup of water.
Press and beat the rice against the side of the saucepan with a spoon until it breaks down into a smooth, pudding-like texture.
Stir in the nutmeg and let the porridge boil for about 5 minutes more. Then add sugar or honey to taste.
Serve the porridge with your choice of evaporated or powdered milk, and finish with a very small pinch of nutmeg on top. For an extra smooth result, soak the raw rice in water overnight before cooking.
