Rich Brownies

Rich Brownies are a dense, cake-like chocolate square that is neither springy nor gooey. The chocolate flavor comes from melted unsweetened baking chocolate rather than cocoa powder, which gives a heavier crumb and makes enough batter for a large pan or two small ones. Coarsely chopped walnuts add crunch. The fat is flexible too: butter, margarine, shortening or lard all work, and oil can stand in with an adjustment.
Instructions
Heat the oven to 175 °C (350 °F).
Melt the chocolate and the solid fat together in a double boiler, or in a saucepan over low heat if you watch it closely. Stir often until smooth, then take it off the heat.
Stir the sugar, eggs and vanilla into the melted chocolate until the batter is evenly combined.
In a separate bowl, mix the flour, baking powder and salt. Fold this into the wet mixture until no dry streaks remain, then stir in the nuts.
Spread the batter into a 30x20 cm (13x9 in) pan, or divide it between two 20x20 cm (8x8 in) pans.
Bake for 30 minutes. The brownies are done when the edges pull away from the sides of the pan.
