Rocky road is a chocolate and marshmallow sweet made in Australia, and this version takes about ten minutes of active work. Chopped walnuts give the soft marshmallow and smooth chocolate something to push against, and a teaspoon of vanilla rounds out the flavor. Everything is stirred into one pot and set in a square pan, so there is no tempering and no special equipment. The only real task is waiting for it to firm up.

Instructions

Measure out all the ingredients before you start, since the chocolate mixture needs your attention once it is on the heat.

Butter an 8x8x2-inch square pan and set it aside.

Put the chocolate morsels, milk and butter in a heavy-bottomed pot. Set the heat to 350°F (175°C).

Stir right away and keep stirring without a break. The mixture is ready when the chocolate has melted and the milk and butter have blended in smoothly.

Stir in the mini marshmallows, chopped walnuts and vanilla extract until everything is coated in chocolate.

Spread the mixture into the buttered pan and press it into an even layer.

Refrigerate for about 2 hours, until the slab is firm enough to cut.
