Rolex (Ugandan Flatbread-Rolled Omelet)

Rolex is a Ugandan street food whose name comes from "rolled eggs", and it is exactly that: a vegetable omelet rolled inside a chapati. The cabbage, tomato and onion keep the filling juicy and a little sweet, while cilantro and black pepper add freshness and heat. Cooking the chapati against the omelet warms it and lets the two stick together, so the roll holds firm in your hand and travels well in foil.

Instructions

Set a pan over medium heat while you prepare the filling, so it is hot when the egg goes in.

Crack the eggs into a medium bowl and whisk them. Stir in the onion, tomato, cabbage, cilantro, salt and black pepper until the vegetables are evenly coated.

Add 1 tablespoon of the oil to the hot pan and pour in half of the egg mixture. Let it cook for about 3 minutes, until the underside is set and the top is only slightly wet.

Lay a chapati over the omelet, then flip the whole thing so the chapati is on the bottom. Leave it for 2 minutes to warm through.

Roll the omelet up tightly with the chapati on the outside. Wrap the roll in foil and serve it right away while it is hot.

Use the remaining oil, egg mixture and chapati to make the second roll in the same way.
