Sabich (Vegetable and Pita Sandwich)
Sabich is an Israeli pita sandwich of fried eggplant, hard-boiled egg and hummus, topped with a fresh chopped salad. It grew out of the Sabbath morning meal of Iraqi Jews, which was once served as separate items on a tray. Here everything goes into one pita. The tangy amba, a pickled mango sauce, cuts through the rich eggplant and tahini, and hot sauce works if you cannot find it.
Instructions
Core and chop the tomatoes, then chop the cucumber and onion. Put them in a bowl with the minced parsley.
In a small bowl, stir together the lemon juice, oil and a pinch of salt. Pour this dressing over the chopped vegetables, toss well, and let the salad stand for a couple of minutes.
While the salad rests, slice the eggplant into rounds about 1 cm thick. Heat vegetable oil in a large skillet over medium-high heat until it is hot.
Fry the eggplant slices until they are golden brown. Lift them out and set them on paper towels to drain off the excess oil.
Spread hummus evenly inside each pita. Fill the pitas with the fried eggplant and the peeled, sliced hard-boiled eggs.
Spoon some of the chopped salad into each pita. Drizzle with tahini and amba, then serve. If you cannot find amba, hot sauce is a fair substitute.
