Saj bread is a thin, unleavened Arabic flatbread made from just flour, water and salt. There is no yeast and no long proof, so the whole batch comes together in about fifteen minutes. The skill is in the rolling and the heat: each round is rolled thin, then cooked on a hot griddle for only a few seconds per side. Fold the cooled breads and keep them for wrapping fillings or serving alongside a meal.

Instructions

Combine the flour and water in a bowl, adding the water a little at a time, until you have a dough you can work with. Knead it thoroughly.

Cover the dough and let it rest for about 5 minutes, then work in the salt.

Pull off small portions of dough and shape each one into a ball. Dust a flat surface with flour and roll each ball out into a thin flat round.

Lay a rolled round on a heated griddle. It cooks in only a few seconds, so watch it closely and cook until it turns tender.

Flip the bread and cook the second side for just a few seconds as well.

Take the bread off the griddle and let it cool. Fold it and store it.
