Saj bread is a thin flatbread baked over a domed or flat griddle, and this version needs only flour, salt, water and a little oil. The dough is rolled out very thin, then draped over a wooden rod and laid onto the hot surface in one motion. The result is a pliable, foldable bread that keeps well and is ready to wrap around fillings or serve alongside a meal.

Instructions

Combine the flour, salt, water and vegetable oil in a large bowl. Knead the mixture thoroughly until it comes together as a smooth dough.

Cover the dough and leave it to rest for about 30 minutes.

Knead the dough a second time, then divide it into smaller portions. Dust a flat work surface with flour so nothing sticks, and roll each portion out thin with a rolling pin.

Lift a rolled-out piece on a wooden rod and lay it onto a heated griddle. Turn it over once and bake the other side.

Take the bread off the griddle and let it cool. Fold it and store it.
