Accra are Ghanaian shrimp fritters, soft-centered and quick to fry from a simple batter. Chopped shrimp, garlic, thyme and a minced Scotch bonnet go straight into a flour base leavened with baking powder, so there is no waiting for dough to rise. Fresh onion and green pepper keep the inside moist, and a little sugar helps the outsides brown. The recipe makes enough for eight to ten people, which suits a party platter.

Instructions

Put the green pepper, spring onions, onion and Scotch bonnet in a large bowl.

Add everything else except the water and the oil: the flour, baking powder, sugar, chopped shrimp, garlic, thyme, parsley, black pepper and salt. Mix well so the shrimp and seasonings are spread evenly through the flour.

Stir in water a little at a time with a spoon until the mixture is soft and thick but still holds on the spoon. Beat it until it is smooth with no dry pockets of flour.

Heat vegetable oil in a pan or deep fryer. Drop in spoonfuls of the batter and fry, turning as needed, until every side is browned. Lift them out and serve while hot.
