Shuku Shuku (Coconut Milk Balls)
Shuku shuku is a Nigerian coconut snack of small baked balls with a crisp crumb coating. The base uses coconut chaff, the pulp left after blending coconut and straining out the milk, so it gives that leftover a second use. Only four ingredients go in, and the method is simple: mix, roll, coat and bake. The result is a chewy, sweet centre inside a golden shell.
Instructions
Put the sugar, egg yolks and coconut chaff in a large bowl. Stir with a spatula until everything is evenly combined and no dry patches remain.
Shape the mixture into small balls with your fingertips, each about the size of a table tennis ball.
Roll each ball gently in bread crumbs until the surface is fully coated, then set it on a baking sheet.
Bake in a preheated oven at 170°C (335°F) for 20 to 30 minutes, until the balls are golden all over.
