Simple Flatbread

This flatbread needs only flour, water and oil, and it comes together in one bowl with a spoon. Oil goes into the well alongside the water, which makes the dough easy to handle and keeps the cooked bread supple. After an hour of rest, each piece stretches paper thin without tearing. A hot pan cooks it in under a minute, so the whole batch is ready fast.

Instructions

Put 2 handfuls of flour in a bowl and use a spoon to make a well in the middle.

Fill half of the well with vegetable oil and the other half with water.

Fold the flour into the liquid and mix until it comes together as a dough.

Leave the dough to rest in the bowl for 1 hour.

Divide the dough into 4 pieces. Flatten one piece with your palms, then stretch it until it is as thin as tissue.

Cook the piece on a pan or other hot surface until small to medium bubbles appear on top.

Flip it with your hand or a spatula and cook the other side for 30 to 40 seconds.

Repeat the stretching and cooking with the remaining pieces until all the dough is used.
