Sindhi Chickpea Confection

This Sindhi chickpea confection is built from just three pantry staples: gram flour, ghee and sugar. The flour is toasted slowly in the ghee until it smells nutty, and that step gives the sweet its whole character. The sugar goes in off the heat, then melts on a second pass over the flame. Chopped cashews, almonds and pistachios add crunch, and you can serve it hot or cold.

Instructions

Melt the ghee in a pan over heat. Add the gram flour and stir steadily until it is toasted, which you will notice by its deeper color and nutty smell.

Take the pan off the heat and stir in the sugar until it is mixed through the flour.

Put the pan back on the heat and keep stirring until the sugar has melted into the mixture.

Scrape the mixture into a bowl and scatter the chopped cashews, almonds and pistachios over the top.

Serve it warm or let it cool and serve it cold.
