Sindhi spiced fish is a simple baked dish that gets its character from a yogurt and onion topping sharpened with tamarind. The fillets are fried on one side first, which gives them a browned base, then covered with the spiced mixture and baked until golden. Coriander, cumin and green chile keep the seasoning direct, and the tamarind adds a sour edge. Chapatis are the natural partner for the topping.

Instructions

Heat a little oil in a frying pan and shallow fry the fish fillets on one side only. You are looking for a lightly browned surface, since the fish will finish cooking later.

Move the fillets to a baking pan, placing them fried side down.

In a bowl, stir together the yogurt, chopped onions, coriander leaves, minced green chile, coriander powder, cumin powder, salt and tamarind paste. Taste the mixture and adjust the salt.

Spread the yogurt mixture evenly over the top of the fish, covering the fillets completely.

Bake the fish until the topping turns golden. Serve it with chapatis.
