Sirene po Shopski (Bulgarian Cheese and Tomatoes)
Sirene po Shopski is a Bulgarian baked cheese dish cooked and served in small clay gyuveche pots. Salty white cheese is layered with sweet roasted peppers, fresh tomato and a little hot pepper, then topped with a milder yellow cheese so everything melts together. An egg cracked over the top turns it into a full supper. It needs only a few ingredients and one oven, and it pairs well with a crisp salad.
Instructions
Divide a layer of cheese between two small lidded earthenware pots, known as gyuveche. Over the cheese, add a layer of hot peppers, sliced tomatoes and chopped roasted bell peppers.
Top the vegetables with more cheese, sprinkling your dried herbs between the layers as you build. Put the lids on the pots.
Bake for about 20 minutes, until the cheese has melted into a soft, bubbling mass.
Break one egg on top of each pot and return them to the oven. Cook until the egg is set the way you like it, from runny yolk to firm.
Serve hot in the pots, with a salad and a cold beer alongside.
