Rice and Peas (Risi e Bisi)

Risi e bisi is a Venetian dish of rice and peas, and its name says exactly that. It comes from the Veneto in northern Italy, where Venice treats it as a signature meal. The recipe asks for very little, so the rice matters: Vialone Nano is the preferred variety. Boiling the peas in their pods and mashing them gives the rice a green, sweet pea flavor throughout.

Instructions

Cook the rice according to the directions on the packet, until it is tender and has absorbed the liquid it needs.

Boil the peas in their pods until they are soft enough to crush easily. Drain them and mash them with the pods until you have a rough, thick puree.

Stir the mashed peas into the cooked rice until the two are evenly combined, then serve. If you like, bacon can be added to the dish.
