Spicy Grilled Duck Breasts

Spicy grilled duck breasts take about ten minutes over the fire and need only a pantry's worth of seasoning. Olive oil helps the salt, black pepper and red pepper flakes cling to the skin, and the covered grill cooks the meat through while the outside browns. A five minute rest keeps the medium rare slices juicy. Cutting them on the bias gives wide, tender pieces that suit a plate of grilled vegetables or rice.

Instructions

Rub the duck breasts all over with a thin coat of olive oil. Season them generously with salt, black pepper and the red pepper flakes, then set them aside while the grill heats.

Heat a grill to medium-high. Lay the duck breasts on the grates, close the lid, and cook for 4 to 5 minutes.

Flip the breasts and cook, covered, for another 3 to 4 minutes. This gives a medium rare center.

Move the duck to a plate and let it rest for 5 minutes so the juices settle back into the meat.

Slice the breasts on the bias and serve while still warm.
