Split Peas (Cooked)
Plain cooked split peas are a cheap, filling pantry staple that needs only water, salt and a little patience. This version keeps things simple, with a good rinse and a gentle simmer of about an hour. It also works as a base: drop in bacon, ham, kielbasa, salt pork or smoked sausage as the peas cook, and the smoky fat flavors the whole pot. In hard water areas, a pinch of baking soda speeds softening.
Instructions
Pick over the dry split peas to remove any stones or shriveled bits, then rinse them well under running water. Discard the rinse water, which your houseplants will happily take.
Put the peas in a pot with 5 to 6 cups of salted water. Bring to a simmer and cook gently for 45 minutes to 1 hour, until the peas are tender and have softened to your liking.
If you want more flavor, add bacon, ham, kielbasa, salt pork, or smoked sausage to the pot while the peas cook. Serve the peas warm.
