Strawberry Italian ice is a four-ingredient frozen dessert made in a blender and finished with a fork. Whole strawberries give it real fruit flavor, and a little lemon juice keeps the sweetness from going flat. Chilling the pan first helps the mixture freeze quickly, so you are eating it within an hour. Mashing the frozen edges into the soft center gives the classic fine, slushy texture, with no ice cream machine needed.

Instructions

Put a metal cake pan, 9 to 10 inches across, in the freezer so it is very cold when the mixture goes in.

Put the strawberries, sugar and lemon juice in a blender and blend until the mixture is smooth and you can no longer feel any sugar grains.

Add the ice cubes and blend again until smooth. Pour the mixture into the chilled pan.

Freeze for 30 to 40 minutes, until the edge is frozen but the center is still soft.

Stir the ice, mashing the frozen parts with a fork, then spoon it into 2 bowls and serve.
