Fisherman's Casserole

Fisherman's Casserole is a baked macaroni dish built around canned salmon, cheddar and cream of celery soup. The pantry-shelf ingredients make it easy to assemble with no sauce to cook on the stove. A little dry mustard sharpens the cheese, frozen peas add sweetness and color, and a buttered bread crumb crust gives the top a crisp finish. It feeds eight from one pan.

Instructions

Heat the oven to 350°F (175°C) and grease a 9 x 13-inch baking pan.

Cook the macaroni following the package directions, then drain it well.

In a large bowl, stir together the grated cheddar, the cooked macaroni, the milk, dry mustard, chopped onion, cream of celery soup and salt until everything is evenly coated.

Add the salmon and the frozen peas and fold them in gently so the fish stays in chunks.

Spread the mixture in the greased pan. Scatter the bread crumbs over the top and drizzle the melted butter across them.

Bake for 45 minutes, until the casserole is heated through and the crumb topping has taken on some color.
