Struffoli (Neapolitan Honey Fried Dough)

Struffoli are small fried dough balls coated in warm orange-scented honey, a classic sweet of Naples. The dough gets its lift from baking powder and its fragrance from a splash of dry sherry, so the pieces fry up light rather than dense. The glaze is simple: sugar, honey and orange zest melted together. Each ball is dipped by hand, which keeps the coating thin and glossy.
Instructions
In a large bowl, mix the eggs, vegetable oil, baking powder, cream of tartar, the first measure of sugar and the sherry until combined.
Stir in flour a little at a time until a dough forms. It should feel somewhat sticky but still be easy to handle.
Pinch off pieces of dough and roll them into small balls, about ½ inch across.
Heat the shortening or oil for deep frying to 350-375°F. Fry the balls until they are golden brown and cooked through.
For the glaze, put the second measure of sugar, the honey and the orange zest in a pan over low heat. Stir until the sugar has dissolved.
Dip each fried ball into the warm glaze, then lift it out so the excess drips off.
