Stuffed Mushrooms with Crabmeat
Crab-stuffed mushrooms are an easy party starter that needs only one bowl and one baking sheet. The mushroom stems are chopped into the filling, so nothing is wasted and the stuffing picks up an earthy flavor. A packet of vegetable soup mix does the seasoning, while sour cream or yogurt keeps the crab moist and bread crumbs give the filling a little body as it bakes.
Instructions
Heat the oven to 350°F (180°C). Lightly grease a baking sheet.
Pull the stems out of the mushrooms and chop them finely. Keep the caps whole, since they will hold the filling.
In a bowl, mix the chopped stems with the vegetable soup mix, crab meat, sour cream or yogurt, bread crumbs, dill if you are using it, hot pepper sauce and pepper. Set the bowl aside.
Arrange the mushroom caps on the prepared baking sheet. Spoon the crab mixture into each cap, then brush the tops with the melted butter.
Bake for 15 minutes, or until the mushrooms are tender when pierced with a knife.
