Sunglow Motel-Cafe Pickle Pie is a spiced custard pie filled with ground sweet pickles, a specialty of a roadside cafe in Bicknell, Utah. Cula Ekker developed it, and the recipe hangs framed on the cafe wall in a Salt Lake Tribune clipping. The pickles add sweetness and a faint tang, much as raisins or mincemeat would, under the cinnamon, nutmeg and lemon. The recipe makes two pies, so it suits a crowd.

Instructions

Beat the eggs and sugar together until the mixture turns pale lemon yellow and thick.

Beat in the cinnamon, nutmeg, lemon extract and cornstarch, then add the cream and the melted margarine and mix until smooth.

Stir the drained, ground sweet pickles into the custard mixture.

Divide the filling between the two unbaked pie shells.

Bake at 350°F for 1 to 1.25 hours. The pies are done when a knife pushed into the center comes out clean.
