Sweet Italian Sausage Skillet
This sweet Italian sausage skillet cooks a full weeknight dinner in one large pan with a short list of pantry items. The sausage is browned first and drained, so the sauce of stewed tomatoes, tomato paste and chicken broth stays rich without turning greasy. Green beans add some bite and color, and the pasta is cooked separately and folded in at the end. A layer of melting provolone or mozzarella finishes it.
Instructions
Cook the pasta in boiling water until tender, then drain it and set it aside.
While the pasta cooks, slice the sausage and brown it in the hot oil in a large skillet for about 5 minutes. Pour off the fat that has collected in the pan.
Stir in the stewed tomatoes with their juice, the tomato paste, the chicken broth and the drained green beans. Bring the mixture to a boil, then turn the heat down.
Cover the skillet and simmer for 10 minutes, so the sauce thickens slightly and the sausage flavors the beans.
Stir the cooked pasta into the skillet until it is coated with the sauce.
Sprinkle the shredded cheese over the top and serve straight from the pan.
