Sweet Potatoes Sautéed with Honey

Sweet potato cubes sautéed in butter and a spoonful of honey make a quick single-serving side that takes about 15 minutes. The honey caramelizes onto the edges as the pieces brown, while salt and optional smoked paprika keep the sweetness in check. The method relies on restraint: stir only every couple of minutes so the cubes get color. Orange or white sweet potatoes both work.
Instructions
Peel the sweet potato and cut it into cubes of about 1 cm (0.4 in). They do not need to be exact, but keep them close in size so they cook at the same rate. Discard the peel.
Set a large frying pan on the stovetop over medium heat. In a small bowl, stir together the honey, salt and smoked paprika, if using.
Add the butter and oil to the pan and let the butter melt completely. Add the sweet potato cubes and stir them around so they sit in a single layer, with no pieces stacked on top of each other.
Pour the honey mixture over the potatoes and stir until every piece is coated.
Cook for about 10 minutes, stirring once every 2 minutes or so. Stirring keeps one side from burning, but stirring more often stops the cubes from browning properly. They are ready when they are browned in places and tender inside.
Serve straight from the pan, with a little extra salt on top to taste.
