Taco meat is a one-pan filling you can make from a pound of ground beef or turkey and a few spices from the shelf. This version builds flavor with finely chopped onion browned alongside the meat, then a covered simmer in fresh tomato or tomato sauce that keeps it moist. Chili powder, oregano and cumin do the seasoning, and the ingredient list has easy swaps, such as onion powder for fresh onion, so it works with what you have.

Instructions

Put the ground meat and the chopped onion in a large pan and cook them together, breaking up the meat as it goes, until no pink remains. Pour off the grease.

Add the tomato or tomato sauce, chili powder, oregano, cumin and pepper to the browned meat. Stir well so the spices coat everything evenly.

Heat the mixture until it is hot all the way through. Look at the pan at this point, and if the meat seems dry, stir in a little more tomato sauce.

Cover the pan and let the meat simmer for 20 minutes. If the mixture starts to dry out before then, take it off the heat sooner. It is ready when the meat is moist but not runny.
