Tiramisu (Non-Alcoholic)
This shortcut tiramisu swaps ladyfingers for Twinkies, whose soft yellow sponge drinks up espresso just as the traditional biscuit does. The topping is a simple blend of mascarpone, egg yolk and sugar, with no alcohol anywhere in the pan. Scooping out the cream filling first leaves room for the coffee to soak in. A heavy dusting of bitter cocoa keeps the sweetness in check.
Instructions
Halve the Twinkies and scoop the cream filling out of each half. Throw the filling away, then lay the sponge halves in a single flat layer in a 9x9-inch high-sided square baking pan.
Pour the cooled espresso over the sponge halves so they soak it up.
In a bowl, combine the beaten egg yolks, mascarpone and sugar until the mixture is evenly blended.
Tip off any espresso that the sponge has not absorbed. Pour the mascarpone mixture over the soaked Twinkies and smooth the top level with an offset spatula.
Spoon cocoa powder into a sifter or a shaker-lidded container and dust it generously over the whole surface. Serve.
