Toasted Coconut Flakes
Toasted coconut flakes are a crunchy, caramelized snack that Nigerians eat by the handful. The recipe starts with a fresh, ripe coconut, grated by hand, rather than the dried shreds from a bag. Sugar and a little salt coat the flakes and brown in a low oven as you stir them. The result is crisp, sweet and lightly salty, and it needs only three ingredients.
Instructions
Crack the coconut open and pull the white meat away from the shell.
Grate the coconut meat into flakes.
Toss the flakes with sugar and a pinch of salt until they are evenly coated.
Spread the mixture in a thin layer on a baking sheet and set it on the lowest rack of the oven. Bake at 300˚F, stirring every few minutes, until the flakes are golden brown and crisp.
Stay close to the oven during the last stretch, because the flakes burn quickly. If the layer is too thick, the flakes take much longer to crisp, so spread them thinly.
Take the pan out of the oven and let the flakes cool completely so they finish crisping before you eat them.
