Tofu and Couscous
Tofu and couscous is a fast, meat-free main built from a handful of pantry staples. Instant couscous needs only boiling water and five minutes of rest, so the only real cooking is sautéing the tofu with red pepper and raisins. The raisins turn sweet and soft in the pan and play well against curry or any mixed spice you stir in at the end. It suits a quick weeknight dinner.
Instructions
Put the cubed tofu, diced red bell peppers and raisins in a pan and sauté them together. Keep cooking until the peppers and tofu are soft.
Bring the water to a boil in a separate pot. Stir in the couscous, cover the pot and take it off the heat.
Leave the couscous to rest for 5 minutes, until it has absorbed all the water. Fluff it with a fork to separate the grains.
Combine the tofu mixture with the couscous and stir in the olive oil. Season to taste with curry powder or another mixed spice blend.
