Tub tim krob is a Thai dessert of red-dyed water chestnut cubes served in coconut milk over ice. The tapioca coating turns glossy and slightly chewy when boiled, while the chestnut inside stays crisp, which is where the contrast comes from. The bright red pieces earned it the name Red Rubies. Instructions

Peel the water chestnuts if needed and cut them into small cubes.

Put the cubes in the red food coloring, mixed with the water, and let them soak until they turn red.

Toss the red cubes with the tapioca flour until each piece is coated all over.

Drop the coated cubes into a pot of hot water and boil them for several minutes. They are done when they float to the surface.

Transfer the cubes to a bowl, pour in the coconut milk, and add ice cubes before serving.
