Easy Onion Chicken
Easy Onion Chicken coats chicken breasts in crushed French-fried onions instead of breadcrumbs. The onions are already seasoned and fried, so they bake into a crisp, savory crust with no extra spices or oil needed. The method is only an egg dip and a roll in the crumbs, and crushing the onions in a zip bag keeps the mess to a minimum. It makes a quick weeknight dinner for four.
Instructions
Heat the oven to 400°F. Crush the French-fried onions into coarse crumbs. A freezer-strength zip-closure bag and a rolling pin work well, and the same bag can be used later for coating.
Pour the beaten egg into a medium, wide bowl. Cut each chicken breast in half.
Dip each piece of chicken in the egg, then roll it in the crushed onions until it is coated on all sides.
Place the coated chicken on a sprayed baking pan. Bake for 20 to 25 minutes, until the chicken is cooked through.
