Tubani is a Hausa dish from Nigeria that turns corn and soybeans into a fried, shaped dough. The baobab leaf powder, known as kuka, gives it a distinctly earthy, green flavor that you will not get from the usual fritter seasonings. Everything goes through the blender, so there is no soaking or grinding by hand to manage. It is a filling, plant-based snack built from a short list of pantry staples.

Instructions

Put the corn, soy beans, kuka, potash, pepper and stock cube into a blender. Add a little water at a time while blending, so the mixture does not become runny.

Keep blending until you have a smooth, thick dough that holds together when pressed.

Shape the dough into pieces of whatever size and form you like, such as rounds or small cakes.

Heat vegetable oil in a pan and fry the shaped pieces until they are cooked through and firm on the outside. Lift them out and let the excess oil drain before serving.
