Cola BBQ Chicken is a grilled chicken dish that pairs a dry rub with a sweet, spicy cola-based sauce. The cola gives the glaze a caramel sweetness, and the rub keeps it from tasting like candy. Basting at every turn builds the sauce into thin, sticky layers instead of one thick coat that scorches. Cooking breasts and drumsticks together means the lean and dark meat each get their own target temperature.

Instructions

Coat the chicken pieces evenly with the barbecue chicken rub, pressing it onto the surface.

Refrigerate the seasoned chicken for at least 1 hour so the rub has time to flavor the meat.

Preheat the grill to medium heat.

Put the chicken on the grill and turn it often. Each time you turn a piece, baste it with the cola BBQ sauce.

Keep grilling and basting until a thermometer reads 165°F in the thickest part of the breasts and 170°F in the drumsticks.

Let the chicken rest for 15 minutes, then serve.
