Turon (Filipino Plantain Spring Rolls)

Turon is a Filipino street snack of saba plantain wrapped in a thin lumpia wrapper, fried until crisp, then glazed in melted brown sugar. Saba plantains are starchy and hold their shape in hot oil, so the filling turns soft and sweet inside the shell. Rolling the hot fried turon through the caramel gives each one a thin, glassy coating that sets as it cools. Ripe jackfruit is an optional addition.
Instructions
Lay one lumpia wrapper flat on your work surface. Place a piece of plantain and a few slices of jackfruit in a line down the center.
Fold the sides of the wrapper in over the filling, then roll it up snugly. Brush the loose end with a little water and press it against the roll so it seals.
Repeat with the remaining wrappers and filling until you have 10 rolls.
Pour about an inch of oil into a pan and heat it over medium heat. Fry the rolls until they are golden brown on every side, turning as needed.
Lift the rolls out of the oil and let the excess drain off.
Put the brown sugar in a heavy-bottomed pan over medium heat. Stir now and then until it has melted completely, and take care that it does not burn.
Take the pan off the heat and add the fried rolls straight away. Turn them until they are coated in the caramelized sugar.
Lift the rolls out of the sugar and serve.
