Tuwo Alabo (Nigerian Cassava Swallow)
Tuwo alabo is a Nigerian swallow made from just cassava flour and water. The flour comes from peeled cassava that has been fermented, sun-dried and milled, which gives it a distinct, slightly tangy character. It is the Hausa version of lafun and a stand-in for tuwo masara. With two ingredients and about twenty minutes, the only real skill is stirring steadily so the mixture stays smooth.
Instructions
Sift the cassava flour into a bowl to catch any grit or debris, and set it aside near the stove.
Bring the water to a boil in a pot. Add the flour a little at a time, stirring as you go so it blends into the water and forms a smooth mixture.
Keep stirring thoroughly until no lumps remain, then cook for a minute or two more. The tuwo is ready when it is smooth and holds together as a thick mass.
Serve it while hot.
