Tuwo Alkama (Wheat Swallow)

Tuwo alkama is a wheat swallow from northern Nigeria, made with nothing but whole wheat flour and water. The dish depends on one technique: the flour goes into boiling water gradually while you stir without stopping, which keeps the dough smooth and free of lumps. The result is a dense, mild, slightly nutty mound meant to be pinched off by hand and used to scoop up a soup or stew.
Instructions
Sift the whole wheat flour into a bowl to remove any bits of husk or other debris.
Bring a saucepan of water to a boil over the heat.
Add the flour to the boiling water a little at a time, stirring constantly so no dry pockets form. Keep stirring until the mixture thickens into a heavy, smooth dough.
Let it cook for 5 minutes, then take it off the heat and serve while hot.
