Vanilla Crisps
Vanilla crisps give you the flavor of a sugar cookie without the wait. The dough needs no chilling, so you can go from mixing bowl to oven in one sitting. Using both butter and shortening gives a cookie with buttery taste and a light, crisp bite. The ingredient list is short and made of pantry staples, and the optional teaspoon of almond extract adds a pleasant twist.
Instructions
Heat the oven to 375°F. Leave the cookie sheet ungreased.
Beat the butter, shortening and sugar together in a large bowl until the mixture is well blended and creamy.
Mix in the salt and vanilla. Then add the eggs one at a time, beating well after each one so it is fully absorbed.
Stir in the flour until it forms a dough. No chilling is needed, so you can shape the cookies right away.
Roll the dough into small balls and set them on the ungreased cookie sheet. Press each ball down into a flat circle.
Bake for 8 to 10 minutes. Lift the cookies off the pan right away and let them cool.
Make it personal.
